I am going to prototype an RTC shield (I think the RFduino team is also working on one).
I want a mini datalogger (RTC+RFD+microSD).

GPS would be my top suggestion as well

An Ethernet module could allow internet capable projects, also if it could have power over Ethernet capabilities it would allow us to both add connectivity and a power supply.

A software radio module would allow us to create a general wireless connection option for project. As a software radio is a configurable wireless communication system that can be adapted through software to virtually any wireless communication system or protocol.

I would love to see a GPIO expander.

I wrote a c driver for PIC for one of my major classes this fall that used a MCP23S17 to interface a character LCD and a 16-digit keypad. 4-wire SPI.

There is an I2C version MCP23017. Chip has cool IOC capabilities too!

I would gladly buy one of these or a similar gpio breakout board stackable with rfduino!

Anyone have a dimension recommendation?

I would like to see a ic2 port expander board/shield for the rfduino stackable form factor  based on the SX1509 16 Output I/O Expander chip.
Sparkfun has one with an arduino lib available: see /www.sparkfun.com/products/11502

How about a lipo battery shield with connectors to supply battery power (3.3v, or 5v) to devices that need it from the battery shield rather than from the rdfuino boards headers.

a 2 cell  (7.4v) lipo can supply 3.3v and 5v and a 1 cell (3.7v) could supply 3.3v to external devices
just add the correct regulators and power output connections.
